Cookie

  • 1/2 C butter, softened
  • 1/3 C dark brown sugar
  • 1/3 C sugar
  • 1 egg
  • 3 TBS unsweetened cocoa powder (Hershey!)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 cup Reese's peanut butter cups, coarsely cohpped

Peanut Butter Icing


Cookie 

  1. Preheat oven to 350.  Line cookie sheet with parchment paper.
  2. In a large mixing bowl, mix the butter, brown sugar, and sugar on medium/high speed for about 3 minutes, or until fluffy.  Add in egg, vanilla, and cocoa powder.  Mix until combined.  Add in dry ingredients and mix until combined.  Stir in Reeses cups.  
  3. Bake at 350 for 15-17 minutes.
  4. When done baking remove from oven and allow to cool and baking sheet for a few minutes, then move to cooling rack.  
  5. After completely cooled, ice the cookie.
